Hot and Spicy Chicken Wings 

Ingredients 
1 cn Tomato sauce (8oz) 
2 tb Red pepper flakes 
2 tb Iquana XXX (HMB121) 
1 tb Garlic powder 
1 tb Onion powder 
2 tb Jalapeno peppers, chopped 
1 lb Chicken wings 

Instructions 
Combine tomato sauce, red pepper flakes, Iquana XXX, garlic powder, onion powder and Jalapeno peppers in a medium size bowl. Spray a baking sheet with no-stick cooking spray. Place chicken wings on baking dish. Brush sauce over wings. Bake at 350° for 20 mins. Turn over and brush with sauce and bake for another 10 mins. Serve with blue cheese dressing and celery if desired. Serves 4. 
 
 
 

BBQ Chicken Wings 

Ingredients 
2 1/2 lb Chicken wings 
6 oz Smokin' Hot BBQ Sauce (APP710) 
1/2 c Melted butter 

Instructions 
Cut the chicken wings in two at the joints. cover the chicken wings. To bake, preheat the oven to 450F. Spread the chicken wings out on a baking sheet in one layer and bake 45 minutes. To make the sauce, combine the Smokin' hot BBQ Sauce and melted butter and blend thoroughly. As soon as the chicken wings are cooked, douse with the sauce, and serve immediately. 
 

Bad Girl Chicken Wings 

Ingredients 
2 1/2 lb Chicken wings 
1/4 c Butter 
3 tb Bad Girls in Heat (PPT101) 
1 tb Vinegar; optional 
Vegetable oil 

Instructions 
Preheat oven broiler or BBQ. Trim off wing tips. Separate wings into 2 sections. Slowly melt butter in large saucepan. Add the Bad Girls in Heat and vinegar and remove from heat. Brush  both sides of wings with vegetable oil and place on broiling rack. Broil 15- 20 minutes or until cooked. Toss wings and sauce together. 
 
 

Buffalo Chicken Wings With Blue Cheese Dipping Sauce 

Ingredients 
6 tb Butter or margarine 
4 tb Melinda's Original XXXtra Hot Sauce (MEL101) 
Vegetable oil for frying 
2 lb.Chicken wings, disjointed, tips discarded 

Dipping Sauce: 
1/4 lb Blue cheese, Roquefort or Gorgonzola 
1/2 c Mayonnaise 
1/2 c Sour cream 
1 tb Lemon juice 
1 tb Wine vinegar 

Instructions 
Melt butter in a small saucepan. Add Melinda's Original XXXtra Hot Sauce & remove from the heat. 
Deep fryer oil to 375°. Fry wings in batches w/o crowding until golden brown, 12 1/2 minutes until cooked. 
Drain on paper towels. 
Toss wings with sauce mixture & serve warm w/ Blue Cheese dipping sauce. 

BLUE CHEESE DIPPING SAUCE 
In small bowl, mash the blue cheese, leaving some small lumps. Whisk in the mayonnaise until blended. Add the remaining ingredients & whisk to blend well. Cover & refrigerate until serving time. 
 
 

Another official recipe for Buffalo wings. 

2 1/2 pounds chicken wings, trimmed and separated 
1/2 stick of butter/margarine 
4 - 5 tablespoons Smokin' Hot Jalapeno Pepper Sauce (APP121) or Smokin' Hot Habanero Pepper Sauce(APP161) 
enough oil to deep-fry 
 

In a saucepan, melt butter. Add hot sauce to melted butter. (a little experimentation with amounts will be necessary to find the right amount of heat for you.) After mixing the butter/hot sauce, lower heat. 
Heat frying oil to medium high and deep fry wings until brown and crisp, 10 to 15 minutes. Drain on a paper towel. 
Put wings in saucepan, and toss to coat evenly. Transfer to platter and serve with Blue Cheese or Ranch dressing and celery sticks. 

 

Buffalo Wings an alternate recipe 

2 1/2 pounds wings trimmed and separated 
1 cup flour 
2 tablespoons cornstarch 
2 teaspoons baking powder 
1 1/2 teaspoons salt 
1/2 teaspoon oregano 
1 cup water 
1/2 stick butter/margarine 
4 - 5 tablespoons Smokin' Hot Habanero Pepper Sauce(APP161) 
enough oil to deep fry 
 

Mix flour, cornstarch, baking powder, salt, water, and oregano in a bowl. 
In a saucepan, melt butter. Add Smokin' Hot Habanero Pepper Sauce to melted butter. 
After mixing the butter/hot sauce, lower heat. 
Dip wings in batter, coating them as much as possible. 
Heat frying oil to medium high and deep fry wings until brown and crisp, 10 to 15 minutes. Drain on a paper towel. 
Put wings in saucepan, and toss to coat evenly. Transfer to platter and serve with Blue Cheese  or Ranch dressing and celery sticks. 
 

ZING Wings 

2 1/2 pounds wings, trimmed and separated 
4-5 tablespoons  Smokin' Hot Jalapeno Pepper Sauce ( APP121) 
1/4 teaspoon vinegar 
1/2 stick butter/margarine 
1 package Italian Salad dressing mix 
oil for deep frying 
 

In a saucepan, melt butter. Add hot sauce, vinegar and Italian dressing. After mixing all ingredients, lower heat. 
Heat frying oil to medium high and deep fry wings until brown and crisp, 10 to 15 minutes. Drain on a paper towel. 
Put wings in saucepan, and toss to coat evenly. Transfer to platter and serve 
 
 

 JD's Garlic Wings 

2 1/2 pounds wings trimmed and separated 
4-5 tablespoons Smokin' Hot Jalapeno Pepper Sauce ( APP121) or Smokin' Hot Habanero Pepper Sauce( APP161) 
4 garlic cloves 
1/2 large lemon and rind 
honey to taste 
sesame oil to taste 
 
Mix all ingredients in a a bowl. Marinade for at least two hours at room temperature. 
Put wings on broiling rack and broil until browned and cooked through. (about 20 minutes) 
Transfer to platter and serve. 
 
 

Beer Burner Wings 

2 1/2 pounds wings, trimmed and separated 
4 tb   Smokin' Hot Jalapeno Pepper Sauce (APP121) 
A acouple of drops of  Daves gourmet Insanity Sauce (DAV101) (optional, this stuff is hot so only use a few drops at a time) 
3/4 stick butter/margarine 
3/4 teaspoon crushed red pepper flakes 
1 teaspoon cayenne pepper 
1/4 cup beer 
oil for deep frying 
 

In a saucepan, melt butter. Add hot sauces, beer, pepper flakes and cayenne pepper to melted butter. 
Heat frying oil to medium high and deep fry wings until brown and crisp, 10 to 15 minutes. Drain on a paper towel. 
Put wings in saucepan, and toss to coat evenly. Transfer to platter and serve 
 

Ultimate Hot Wings 

4 Thai Peppers 
4-6 tb  Ultimate Burn (PPR121) 
1/2 Stick margerine 
1 tb Vinegar (white) 
1/4 t cayenne pepper 
1/4 t crushed red pepper 
1/8 t garlic salt 
1/8 t black pepper 
1/4 t worcestershire sauce 
2 t tabasco sauce 
2-1/2lbs wings 

Take all the ingredients and mix in a saucepan low heat. Let everything blend till it has a uniform color. 
While that's going take your wings and put them under your broiler about 12 minutes per side or until cooked. 
After the wings are cooked toss them in the sauce pan and coat evenly. 
This step is optional. Place coated wings back under broiler for a few minutes to make them crispy. 

 

Paradise 

2 -1/2 lbs. chicken wings 
3-4 tbs butter or margarine 
6tbs Another Bloody Day in Paradise (PPR101) hot sauce 
1 tablespoon fresh lemon juice 
1 tablespoon honey 

Wash wings. Split at each joint and discard tips. Bake in 400 degree oven for 25 minutes until crispy. 
Melt butter or margarine insauce pan. Stir in Another Bloody Day in Paradise sauce, lemon juice and honey. 
Toss wings in sauce to coat evenly. 
 

 

Mexican Deviled Eggs (Very young chicken) 

Ingredients (12 servings) 
12 ea Hard Boiled Eggs; Lg, Peeled 
1/4 c Mayonnaise Or Salad Dressing 
1 tb Cumin; Ground 
1 tb Capers; Finely Chopped 
1 tb Mustard; Prepared 
1/2 ts Salt 
1 ea Jalapeno Pepper; * 
1 x Red Chiles; Ground 
1 x Cilantro; Fresh, Snipped 

Instructions 
* Jalapeno Chile should be seeded and finely chopped. Cut the eggs lengthwise into halves. Slip out the yolks and mash with a fork. Mix the mashed yolks with the mayonnaise, cumin, capers, mustard, salt and the jalapeno pepper. Fill the egg whites with the egg yolk mixture, heaping lightly. Sprinkle with ground red chiles and garnish with the cilantro.
